Gorgonzola is an ancient blue cheese which originated in the mountainous Piemonte region of Northern Italy. Desertetto Blua is named in honor of Sam Lovera's grandmother Marta Blua who resided in the small village of Desertetto by Valdieri in Piemonte. Lovera's dedicated cheese crew uses the traditional double-curd technique of gorgonzola production. This method uses two different day's curds to produce a cheese that is both crumbly and smooth. Using raw Jersey cow's milk rich in cream along with remote strains of p. rojqueforti they have crafted a uniquely exquisite blue. The milk for all of our hand-crafted cheeses is from family-owned single source dairies and is hormone and pesticide free.

Flavor: Earthy, buttery and pleasantly mild blue. Subtl complexities of grassy notes.  

Beverage Pairings: Excellent with a Sangiovese. Also pairs nicely with a crisp apple cider.  

Food Pairings:  At room temperature, this cheese is wonderful with fresh fruits; apples, pears, and figs.

Cooking Tips: Always serve this cheese at room temperature or heated. Cheese served best on a cheese board paired with fresh fruit and cured meats. Does melt well if when used in pasta dishes.

Notes: This natural rind cheese is made with the age old “double –curd” method. We use a fresh milking of raw Jersey cow’s milk to make the first batch of curd. The second curd is made the next day with another load of fresh milk. These two batches of curd are used to hand build each wheel; creating an unmistakable texture and flavor.
