This rustic Alpine style cheese is made from raw goat’s milk. Mild and buttery, this aged goat cheese is emboldened with whole red and green peppercorns. This unique offering from the Lovera Cheese Crew is a perfect addition to your next cheese board. Black Hat Toma is named in honor of our friend Hershel Williams, who has worked tirelessly to promote Oklahoma goat dairying….and who likes to wear his ten-gallon black felt cowboy hat as often as possible.The milk for all of our hand-crafted cheeses is from family owned single source dairies and is hormone and pesticide free.

Flavor: Nutty, grassy, lactic body with earthy rind tones. Developing tangy sharpness with age. Zesty peppercorn finish.

Beverage Pairings: Complex flavor profile stands best with a robust aged red wine. Peppery/salty finish goes excellently with summer ales.  

Food Pairings:  At room temperature, this cheese is wonderful with fresh fruits; apples, pears, and figs.

Cooking Tips: Always serve this cheese at room temperature or heated. Cheese served best on a cheese board paired with fresh fruit and cured meats. Excellent shaved over fresh mesclun salad.
