This rustic Alpine style cheese is made from raw goat’s milk. Aged on cedar planks for a minimum of three months. This natural rind cheese is mild and nutty with a peppery, earthy finish. Working closely with our two goat dairy partners we utilize the very highest quality fresh milk possible. Black Hat Toma is named in honor of our friend Hershel Williams, who has worked tirelessly to promote Oklahoma goat dairying….and who like to wear his ten-gallon black felt cowboy hat as often as possible. The milk for all of our hand-crafted cheeses is from family owned single source dairies and is hormone and pesticide free.

Flavor: Nutty, grassy, lactic body with earthy rind tones. Developing tangy sharpness with age.

Wine Pairings: Complex flavor profile stands best with a robust aged red wine.

Food Pairings:  At room temperature this cheese is wonderful with fresh fruits; apples, pears, and figs.

Cooking Tips: Always serve this cheese at room temperature or heated. Cheese served best on a cheese board paired with fresh fruit and cured meats. Excellent shaved over fresh mesclun salad.
