Crafted from a blend of cow and goat's milk, this cheese is truly a unique experience in the world of stretched curd cheeses. All the creamy goodness of the Jersey cow's milk, along with the nutty and caramel notes of the La Mancha goat's milk; Batista is smooth and creamy yet dry enough to be grated on your favorite pasta dish or shaved on a fresh garden salad.The milk for all of our hand-crafted cheeses is from family-owned single source dairies and is hormone and pesticide free.

Food Pairings:  At room temperature, this cheese is wonderful with fresh fruits; apples, pears, and figs. Batista’s sharpness compliments fresh green salads magnificently.  It is a natural complement to any pasta with red sauce.

Cooking Tips: Always serve this cheese at room temperature or heated. Can be sliced then fried in olive oil for a delicious appetizer.  Shred onto baked pasta dishes. Fast and fun as cheese toast.

Notes: Named in honor of our grandfather Batitsta Lovera. Batista was one of the early Italian immigrants to this area, finding his way from the Mountains of Piedmonte to the coal mining shafts of Oklahoma in the search for a better life and future for his family.  In 1930 Batista, along with 29 others, was killed in one of the many horrific mining accidents of that era.
