Each Caciocavera cheese is carefully hand formed into the traditional gourd shape. Incorporating a blend of dried oregano, parsley, basil, and rosemary creates an immediately savory and wonderfully tasty rendition of our flagship cheese. Try this mild provolone style cheese melted on your next homemade pizza! The milk for all of our hand-crafted cheeses is from family owned single source dairies and is hormone and pesticide free.

Flavor: Herbal finish with nutty, caramel, slightly buttery flavors still holding true.

Beverage Pairings: This herbal cheese pairs well with a dry Cabernet. Also nice with a locally crafted red ale.  

Food Pairings: This mild, herbal cheese is excellent with all sorts of rustic bread and tomato-based sauces.

Cooking Tips: Make a pizza with this cheese by heating the crust first, then partially melting this cheese atop the crust and ladling on some of your favorite sauce, lastly finish with another layer of this cheese sprinkled and baked atop the sauce.  Thinly sliced, it is delicious melted on grilled eggplant or polenta.

Notes: These cheeses are all handmade and the herbs will not be homogeneously incorporated as such. Just slice a piece and melt it over some ciabatta bread….yum!
