Crafted from a blend of cow and goat's milk, this cheese is truly a unique experience in the world of stretched curd cheeses. All the creamy goodness of the Jersey cow's milk, along with the nutty and caramel notes of the La Mancha goat's milk; Batista is smooth and creamy yet dry enough to be grated on your favorite pasta dish or shaved on a fresh garden salad. Each cheese is first hand-formed, bathed in saltwater, then individually tied with twine and hung to cure a thin, marvelously edible rind.
