Antipasti/Appetizers begin almost every meal in Italy. Whether something very simple, such as a thin slice of cheese, an anchovy or two, and a pepper preserved in vinegar or a table laden with a dozen or more dishes—hot and cold—antipasti at the table tells us it’s time to “whet our appetites”. There’s a real meal coming up! These “bites” are always eaten at the table, are usually salty and accompanied with a good wine, never with “cocktails”.
